Ingredients Cooking spray ½ of a sweet potato ? cup (75 g) coconut flour ? cup (57 g) cocoa powder ½ cup (72 g) coconut sugar 1 teaspoon baking powder 2 cups (60 g) fresh baby spinach ½ cup (120 ml) chocolate almond milk ¼ cup (60 ml) extra-virgin olive oil 3 eggs ½ cup (88 g) mini chocolate chips Powdered sugar, for dusting (optional) Yield: 9 to 12 Brownies Preheat the oven to 350°F (180°C, or gas mark 4). Spray a 9 x 9-inch (23 x 23 cm) baking dish with nonstick cooking spray and set aside. Microwave the sweet potato for 4 minutes on high and then carefully peel off the skin. In a small bowl, combine the coconut flour, cocoa powder, coconut sugar, and baking powder. Stir until thoroughly mixed. Set aside. In a high-speed blender, combine the sweet potato, spinach, chocolate almond milk, and olive oil. Blend until smooth. Pour the purée into a large bowl and then whisk in the eggs. Slowly stir the flour mixture into the sweet potato purée, adding about one-third at a time, stirring well to combine. Fold in the chocolate chips. Pour the brownie batter into the prepared dish. Bake for 25 minutes. Serve warm or cold. They’re great with a sprinkle of powdered sugar on top (if using). ?
