Add the chicken and cook for 2 to 3 minutes, or until it is no longer pink. Add the peanuts, garlic, and ginger. Continue cooking for another 3 minutes, or until the chicken is browned on all sides. Add the scallions, coconut aminos, cider vinegar, and sesame oil to the skillet. Continue cooking until the chicken is thoroughly cooked and the liquid has simmered for about 1 minute. Evenly divide the chicken mixture among the 8 lettuce leaves. Sprinkle with cilantro, and squeeze a lime wedge or two (if using) over the chicken.
