Slow Cooker Steak Fajitas

Slow Cooker Steak Fajitas

Get away from the frying and make fajitas the easy way with the slow cooker. The long cooking makes the meat both more tender and more flavorful.

1½ pounds (680 g) flank steak
1 can (14 ounces, or 400 g) diced tomatoes, undrained
1 jalapeño, seeded and chopped
½ teaspoon minced garlic
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon chili powder
2 cups (320 g) sliced onion
2 cups (300 g) sliced green bell pepper
2 cups (300 g) sliced red bell pepper
1 tablespoon (1 g) fresh cilantro
Thinly slice the steak across the grain into strips. Place in a slow cooker. Add the tomatoes, jalapeño, garlic, coriander, cumin, and chili powder. Cover and cook on low for 7 hours. Add the onion, peppers, and cilantro. Cover and cook 1 to 2 hours longer, or until the meat is tender.

Yield: 6 servings
