We’re on instagram (@QuartoCooks) and SnapChat (Quarto Knows) Makes 4 crepes Ingredients Filling 1 teaspoon raspberry-flavored extract (may substitute ¼ cup raspberry jam) 1 (12-ounce) container whipped topping 6 PEEPS® Marshmallow Bunnies or Chicks, lavender, cut into ¼-inch pieces Crepes 2 eggs ½ cup milk ½ cup water 1 cup all-purpose flour ¼ teaspoon salt 2 tablespoons butter, melted 1?3 cup granulated white sugar ½ cup confectioners’ sugar, divided 4 PEEPS® Marshmallow Bunnies or Chicks, lavender, for garnish Directions To make the filling, mix together raspberry-flavored extract and whipped topping in a medium mixing bowl until well combined. Fold the PEEPS® pieces into the whipped topping mixture. Set filling aside or refrigerate until crepes are ready to fill. To make the crepes, whisk the eggs in a large mixing bowl. Gradually add in the milk and water, then sift in flour, stirring to combine. Add the salt, butter, granulated sugar, and ¼ cup confectioners’ sugar. Beat until smooth. Heat a lightly oiled medium frying pan or crepe pan over medium-high heat. Pour or scoop ¼ cup batter into the pan. Tilt the pan in a circular motion so that the batter coats the surface evenly. Cook for about 2 minutes, or until the bottom is light brown. Loosen with a spatula, turn, and cook the other side. Carefully slide crepe out of pan and onto a plate. Repeat for remaining 3 crepes. Scoop about ½ cup filling into each crepe and roll. Top each crepe with a small amount of remaining confectioners’ sugar and a Bunny or Chick, and serve immediately.
