This delicious dinner recipe from Laura Fuentes’s new book, The Best Grain-Free Family Meals on the Planet is both kid and adult-approved! * EGG-FREE * NUT-FREE Crispy on the outside and perfectly juicy on the inside, this is one meal you’ll want to make often. 1 1/2 pounds (680 g) boneless skinless chicken thighs, fat trimmed Salt and freshly ground black pepper, to taste Sweet paprika, to taste 2 tablespoons (28 g) butter or ghee 1 red onion, finely chopped 1 pound (455 g) red-skinned potatoes, about 2 inches (5 cm) in diameter, quartered 8 carrots, halved lengthwise and cut into 1 1/2-inch (3.75 cm) pieces 1 tablespoon (8 g) tapioca starch 1¹?3 cups (320 ml) low-sodium chicken broth ¹?3 cup (80 ml) dry vermouth or dry white wine 1 1/2 tablespoons (4 g) minced fresh thyme Season the chicken lightly with salt and pepper and generously with paprika. In a heavy large frying pan set over medium-high heat, warm the butter. Add the chicken and cook for about 2 minutes per side, until brown. Transfer the chicken to a plate and set aside. In the pan, stir together the onion, potatoes, and carrots. Sprinkle with salt and pepper. Sauté for about 5 minutes, or until the vegetables begin to brown. Add the tapioca starch and stir to coat. Gradually stir in the chicken broth and vermouth. Bring to a boil, stirring frequently. Return the chicken to the pan and bring to a boil again. Cover the pan, reduce the heat to medium-low, and simmer for about 25 minutes, or until the chicken and vegetables are cooked through. Stir and turn the chicken over occasionally. Stir in the thyme. Adjust the seasonings to taste. Divide the chicken and vegetables among 4 warmed plates and serve immediately.
