Grain-Free Tortillas * DAIRY-FREE * EGG-FREE * NUT-FREE OPTION This simple recipe will forever revolutionize your taco night, guaranteed. 1 cup (125 g) packed almond flour, plus additional as needed 1/2 cup (65 g) packed tapioca flour 1/4 teaspoon salt 1/4 teaspoon ground cumin (optional) 3 tablespoons (45 ml) avocado oil or olive oil 3 tablespoons (45 ml) warm water, plus additional as needed In a medium bowl, whisk together the almond flour, tapioca flour, salt, and cumin (if using). Add the avocado oil and stir to combine. Slowly add the water, 1 tablespoon (15 ml) at a time, and knead with your clean hands to combine. Transfer the dough to a flat surface and knead for about 1 minute. If the dough is too wet, add a little more almond flour. If too dry, add a teaspoon or two of water. The dough’s texture will vary depending on how you measure the flour. It should feel like play dough. Divide the dough evenly into 8 pieces total. Knead and roll each piece into a small ball. Meanwhile, place a large skillet over medium heat. Place 1 dough ball between two pieces of parchment paper. With a rolling pin or tortilla press, flatten or roll the dough into a 6-inch (15 cm) tortilla. Peel off the top piece of parchment and flip the tortilla into the hot skillet, pulling away the second piece of parchment as you do so. Cook the first side for about 20 seconds, or until it begins to brown. Flip the tortilla over and cook the other side for 30 to 45 seconds, or until the other side is browned and bubbly. Immediately transfer the warm tortilla to a tortilla warmer or place it between two clean kitchen towels to keep warm. These tortillas are best served warmed. Refrigerate any leftover tortillas. To enjoy again, simply warm them in the toaster oven until soft and pliable. Times will vary depending on your oven. YIELD: 8 tortillas Laura’s Tip I use a large skillet so I can cook 4 to 6 tortillas at a time. Working quickly is a must because they are most pliable when warm. Allergy Substitution No-Nut Flour will work as an almond flour substitute for this recipe. Coconut flour will not work, as it’s not a 1:1 substitute.
