Quarto USA Donates All Profits from Latest Burgess Lea Press Cookbook to the Stone Barns Center for Food and Agriculture

Beverly, MA—Quarto Publishing Group USA, part of the leading global illustrated book publisher The Quarto Group, is pleased to announce the latest donation recipient of their charitable imprint, Burgess Lea Press.  All of the profits of Field & Feast, a new cookbook by Dean Carlson of Wyebrook Farm, will be donated to the Stone Barns Center for Food and Agriculture in Pocantico Hills, New York. 

Burgess Lea Press is an imprint of fine books about food from excellent chefs, exemplary restaurants, world travelers, and the new generation of family farms.  Their unique publishing model focuses on publishing books of the highest quality while supporting worthwhile food- related causes.  Quarto donates 100% of after-tax publishing profits on every Burgess Lea Press book to 501(c)(3) organizations that address hunger relief, farmland preservation, and culinary education.

Dean Carlson, author of Field & Feast, will present the check with Acquiring Editor Thom O’Hearn on September 30, the eve of Stone Barns’ popular Harvest Festival.

Field & Feast is a sumptuous collection of 100 inspired recipes from the rustic barn restaurant of Wyebrook Farm, Pennsylvania.  Distinctive modern recipes include Spring Radishes with Bacon Butter, Super-Crust Spatchcocked Chicken, Goat in Hay, Roast Lamb Sandwiches with Tahini and Pickled Onion, Butter Lettuce Salad with Ash-Cooked Eggs, Crackling-Studded Pullman Loaf, Salt Crust-Baked Pork Belly with Hickory Nut Romesco, Beef Cheek and French Onion Soup, and Spring Pickle and Bitter Green Salad.

Dean Carlson lives and works on Wyebrook Farm together with his wife Emelie. After 15 years on Wall Street, Dean Carlson rolled up his sleeves and dove into what he calls a "real job."  He is present for every step of the farming process, and the circle of sustainability he is creating informs every decision on the farm.  The restaurant at Wyebrook Farm features the meats raised at Wyebrook—grass fed beef; heritage pork; and pastured chicken, lamb, and goat—as well as vegetables from organic local farms.

Stone Barns Center for Food and Agriculture is a nonprofit organization on a mission to create a healthy and sustainable food system, and working to develop a culture of eating based on what farms need to grow to build healthy soil and a resilient ecosystem.  They are working to change the way America eats and farms by inspiring people, engaging leaders and the public, developing practices in resilient agriculture and driving choices that benefit human health and the environment.  Stone Barns experiments with and improves sustainable farming practices; trains beginning farmers in resilient, regenerative farming techniques; helps children discover the sources of their food while preparing them to steward the land that provides it; and increases public awareness of healthy, seasonal, and sustainable food.
