The ?avor combination of the crisp, tart apple and the sweet, gooey, rich caramel gets me every time. * Makes 40 Shots Ingredients 10 small Granny Smith apples, halved vertically 1 lemon, halved horizonally, for juicing ½ cup (120 mL) water 1 tablespoon (28 g) caramel or regular hot chocolate mix ½ cup (120 mL) Thai coconut milk or regular milk 2 x ¼-ounce (7 g) packet Knox gelatin ¼ cup (50 g) sugar Yellow food coloring 1 cup (240 mL) butterscotch schnapps or caramel-?avored vodka Instructions 1. Using a melon baller, hollow out the centers of the apples. Squeeze lemon juice onto apple interiors to reduce browning. Line up apple halves on a baking sheet or place in a muf?n tin so they are secure and upright, and set aside. 2. Add the water and hot chocolate mix to a medium saucepan and whisk to combine. Add milk and whisk again. Sprinkle in gelatin and let it sit for 1 minute, letting the gelatin activate. Place saucepan over medium heat, whisking until gelatin dissolves. 3. Add the sugar and whisk until it dissolves. Bring to a light simmer, then remove from heat. Add the yellow food coloring until you get desired caramel color (I use 3–4 drops). Add the schnapps or vodka. 4. Pour mixture into spouted bowl or measuring cup, then carefully pour it into apple halves. Refrigerate for 2 hours, or until ?rm. 5. Slice apple halves in half. Serve immediately—the lemon juice can only prevent browning for so long. Trim off parts of the apples that have browned too much.
