Grain-Free Peanut and Chicken Lettuce Cups
Full of flavor and easy to make, these cups are inevitably the type of dish you’d order repeatedly at your favorite
lunch spot.

2 tablespoons (30 ml) oil
1 pound (454 g) boneless skinless chicken breast halves, cut into 1-inch (2.5 cm) pieces
1/4 cup (80 g) peanuts, chopped
3 garlic cloves, minced
2 teaspoons minced fresh ginger
1/4 cup (25 g) sliced scallions
1 tablespoon (15 ml) coconut aminos
2 teaspoons apple cider vinegar
1 teaspoon toasted sesame oil
8 green lettuce or butter lettuce leaves, washed
Lime wedges (optional)

In a large skillet set over medium-high heat, warm the oil. Add the chicken and cook for 2 to 3 minutes, or until it
is no longer pink.

Add the peanuts, garlic, and ginger. Continue cooking for another 3 minutes, or until the chicken is browned on
all sides.

Add the scallions, coconut aminos, cider vinegar, and sesame oil to the skillet. Continue cooking until the chicken
is thoroughly cooked and the liquid has simmered for about 1 minute.

Evenly divide the chicken mixture among the 8 lettuce leaves. Sprinkle with cilantro, and squeeze a lime wedge or
two (if using) over the chicken.
